Ingredients
1 cup Muscle Mac Macaroni & Cheese prepared according to the directions
3 oz cooked chopped, lean chicken, turkey or pork sausage meat
1/4 cup Black Beans, rinsed and drained
1/4 cup frozen corn
1 tsp cumin
1 tbs cleaned and finely chopped cilantro
2 bell peppers, seeded, and cut in half vertically
Red pepper flakes as desired
Directions

1. Preheat oven to 400 degrees

 

2. In a medium bowl, mix prepared Muscle Mac Macaroni & Cheese with discussed sausage, black bean, corn, cumin, and cilantro.

 

3. Stuff mixture onto pepper halves.

 

4. Place pepper halves in a casserole dish and pour ½ cup of water in dish around peppers, but not on peppers.

 

5. Cover casserole dish with foil and bake for 20 minutes until peppers are tender.

 

6. Serve topped with red pepper flakes if desired. Caution, casserole dish and peppers will be very hot.
